Varieties with less blush will appear more green, even when harvested at the right time. Green tint has little to do with taste or ripeness. We determine maturity of a peach by its internal quality. A common comparison is a banana. While they can be very green, they continue to ripen after picking and they peel will turn from green to yellow. This is exactly the same with a peach!
